Homemade Granola

Total baking time: 20 minutes


4 cups old fashioned oats
2 cups shredded coconut
2 cups sliced almonds
2 cups pumpkin seeds
1/2 cup of olive oil
1/3 cup of honey
1 cup dried craisins
2 teaspoons of cinnamon

Preheat oven to 325 degrees.

In large bowl, mix oats, coconut, almonds, pumpkin seeds and cinnamon. In a separate bowl, whisk together your olive oil and honey. Pour the honey and olive oil over the oat mixture and stir until all of the nuts and oats are evenly coated.

Spray a 13×18 sheet pan with non-stick cooking spray and pour mixture onto pan. Place pan in 325 degree oven, after 10 minutes has passed, remove from oven and stir the mixture for equal baking, then place in the oven for another 10 minutes. When the granola has 5 minutes left of baking, take out and add the dried craisins, then place back in over for last 5 minutes. Enjoy!
