Whole Wheat Spaghetti with Chicken and Veggies


4 chicken breasts, chopped
3 cloves of garlic, minced
2 tablespoons olive oil
1 1/2 cups of frozen or fresh broccoli
1/2 large onion, chopped
10 fresh mushrooms, sliced
1 (15-ounce) can tomato sauce (look for low-sodium tomato sauce)
2 teaspoons dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
1 (16 ounce) package of whole wheat spaghetti or angel hair pasta, cooked
1 cup low-fat shredded cheese or non-dairy cheese
  • Saute chicken and garlic in olive oil in large sauce pan until chicken is done
  • Add broccoli, onion, and mushrooms; Saute for 2-3 minutes
  • Stir in tomato sauce
  • Add dried basil, salt and pepper
  • Serve over cooked pasta; lightly adding shredded or non-dairy cheese
  • Enjoy!
