Dairy-Free Shrimp Alfredo


18 jumbo shrimp

1 pound orecchiette pasta, or desired pasta

2 tablespoons olive oil

1 cup fresh or frozen peas

Dairy-Free Alfredo Sauce:

1/2 cup raw cashews (non salted)

2 cups water

1 shallot, diced

3 large cloves of garlic, diced

2 tablespoons olive oil

1 teaspoon sea salt

Directions: season the shrimp with sea salt and place in a large pan with olive oil on medium heat. Sauté and flip until pink, around 3-4 minutes.

Dairy-Free Alfredo Sauce: in a large pan, sauté shallot and garlic for 1-2 minutes. Add cashews, water, salt and olive oil. Simmer for 30 minutes, then purée in a blender until smooth.

Pasta: cook pasta according to directions on package. Toss cooked pasta with sauce, shrimp and peas. Enjoy!!
