Barley and Garden Vegetable Soup


•1 tablespoon coconut oil

• 1 cup barley

• 1 small onion, diced

• 3 carrots, peeled and chopped

•1 medium sweet potato, peeled and chopped

• 3 garlic cloves, minced

• 1 quart vegetable broth

• 2 cups water

• 2 tablespoons Italian seasoning

• 1 large zucchini, diced

• 8 oz spinach

• 2 large red bell peppers

• 2 cups frozen mixed veggies


Cook the Barley according to package instructions. Then in a 5 quart pot, melt the coconut oil over medium heat. Add onions and garlic and cook for 3-5 minutes. Next add carrot and sweet potato, cook for another 5-7 minutes until vegetables soften. Add vegetable broth, water, Italian seasoning and mixed vegetables. Reduce heat to a low boil, cover and allow to simmer for 10 minutes. Next, add spinach, zucchini and peppers. Simmer for 2-3 minutes. Season with salt and pepper for your tasting. Enjoy!
