Poached Pears


8 pears with stems, peeled
3 cups apple cider
1 cup water
1 cinnamon stick
1/4 teaspoon ground pepper
1/4 ground all spice
Zest of 1 lemon


In a large saucepan, combine the lemon zest, cinnamon stick, all spice, ground pepper apple cider and water.

Next, add the pears in the saucepan. Bring to a simmer. Cook, turning pears occasionally until easily pierced with a knife, about 20 minutes.

Remove pears from liquid to a large bowl. Raise the heat of the cider mixture until reduced to a syrup, about 15 minutes. Remove cinnamon stick. Pour syrup of pears. Refrigerate. Enjoy!
