3 medium sized white, red or sweet potatoes
2 medium stalks of celery, sliced
2 large carrots, peeled and sliced
3 cups of water
2 cups shredded green cabbage
1 cup plain rice milk
3/4 teaspoon salt
In a large pot combine potatoes, celery, carrot, cabbage and water. Bring to a simmer, then cover and cook for 15 minutes or until vegetables are fork tender. Transfer about half of mixture to a blender, add rice milk and salt. Blend for 30 seconds or until completely smooth. Blend remaining mixture in pot. Serve and Enjoy!
