Vegetarian Bean Chili


1 medium onion, chopped
3 medium carrots, chopped
1 large red bell pepper, chopped
2 ribs of celery, chopped
1 large can (28 oz) diced tomatoes with their juices
1 can (15oz) black beans, rinsed and drained
1 can (15oz) pinto beans, rinsed and drained
1 can (15oz) chili beans
2 cups of water
4 cloves of garlic, diced
2 tablespoons of chili powder
1 tablespoon ground cumin
Sliced avocado and chopped cilantro for topping (optional)

In a crockpot, add all of your ingredients and let it cook on low for 6-8 hours or in high for 4-5 hours. Serve in bowl, top with avocado and cilantro and enjoy!
