Grandma Shirley’s Love Bars

Ingredients:

2 cups smashed ripe bananas

3 cans organic garbanzo beans (chickpeas)

1 cup whole grain oats

2 medium sized pink lady apples, peeled and diced

4 teaspoons unsweetened vanilla almond milk

1 teaspoon ground cinnamon

2 teaspoons vanilla extract

1 1/2 cup dried cranberries

Non-dairy dark chocolate, optional for drizzling on top

Directions:

In a ninja mixer, blend the bananas, garbanzo beans, oats, apples, almond milk, cinnamon, and vanilla extract until all the ingredients are blended smoothly together. Then put the mixture into the fridge and let chill for 30 minutes. Once chilled, preheat oven to 350 degrees. Add the dried cranberries to the batter. Line a baking sheet with parchment paper and form into cookies or put in a baking sheet pan to make bars. Bake at 350 degrees for 30-35 minutes. If you’d like you can melt non-dairy (or your preferred) chocolate in a double boiler and then drizzle chocolate over the top of the bars. These are great and a great treat for you!
