Creamy Carrot Soup

Soup Ingredients: 

  • 1 cup carrot juice (whole carrots blended)
  • 1/2 ripe avocado
  • 1 tablespoon lime juice
  • 1/2 tablespoon agave
  • 1 teaspoon ginger, minced
  • pinch cayenne pepper
  • pinch salt
  • topped with 1 teaspoon herb olive oil
  • 3 cilantro sprigs


Blend all ingredients, except cilantro sprigs and olive oil, in a blender until smooth. Separate cilantro leaves from the stems. Using a mortar and pestle, combine the cilantro steams with the olive oil until the oil turns a noticeably green color. Pour blended soup into a bowl. Garnish with cilantro
