Cauliflower Caviar

Ingredients:

Beets: 

1 small yellow beet, peeled and sliced on mandolin

1/2 teaspoon lemon juice

1 teaspoon olive oil

Directions:

Slice beets 1/4 inch thick on mandolin (be careful when using mandolin!) Toss beets with lemon juice and oil. Let marinate in fridge for 20-30 minutes.

Cauliflower Caviar: 

1/2 head cauliflower, stemmed and chopped into florets

1/2 large cucumber, peeled and sliced

1/4 sheet nori

1/2 tablespoon dulse

1/2 tablespoon wake, soaked and drained

1/2 tablespoon olive oil

2 teaspoons lemon juice

1 teaspoon tamari

pinch of salt

2 tablespoons cilantro

Place oil ingredients in food processor until the texture is slightly chunky. Add salt and pepper to taste.

Assembly: 

Drain beets if necessary. Lay beets out in individual slices on a plate. Place a spoonful of cauliflower caviar on top of each beet. Garnish with micro greens if desired. Enjoy!
