1 cup almond meal, coarsely ground
2 tablespoons coriander, ground
3 tablespoons water
2 tablespoons tamari
1 tablespoon maple syrup
1 tablespoon flax seed
1/4 cup +1 tablespoon cup flax meal
Whisk together coriander, water, tamari, and maple syrup. Fold in almond meal and flax seed until well combined. Fold in flax meal and store until the mixture begins to cohere to itself. Spread approximately 1/8 inch thick onto a non-stick dehydrator sheet. Score into 3-4 inch long rectangles and dehydrate until crisp.
3/4 cup cooked chickpeas
1 clove garlic
2 tablespoons olive oil
4 tablespoons lemon juice
1/2 teaspoon sea salt
1 teaspoon cumin
1/2 teaspoon smoked paprika
Place all ingredients in food processor and pulse until completely smooth.
Cover coriander toast with hummus, sliced avocado, spiralized carrot, cilantro, salt and pepper. Enjoy!
