Oyster Mushroom Ceviche


2 tablespoons red onion, chopped

1/4 cup roma tomato, diced

1/4 habanero chili, seeds and ribs removed; may use other chili if preferred

1/3 cup orange juice

2 tablespoons lime juice

1 cup oyster mushrooms

1/2 avocado

1/4 cup cilantro

1 teaspoon salt


In a bowl, mix the onion, tomatoes, habanero, orange juice, lime juice and salt. Add the oyster mushrooms and mix. Cover and tightly wrap with saran wrap. Refrigerate for 30 minutes. Enjoy!
